Chinese Chicken Salad
PREP: 20 MINUTES SERVINGS: 6
Ingredients
3 1/2cupsshredded roasted cooked chicken
3 1/2 cups shredded Romaine lettuce
2 1/2 cups shredded iceberg
1 1/2 cup finely julienne carrot
2cups finely shredded purple cabbage
2whole scallions, thinly sliced
2 cups English cucumber, thinly sliced into batons
1/4cupsliced roasted almonds, or cashew
1/3 dry un-sweeten cranberry
1 cup crispy *La Choy noodles
1cupMandarin oranges or an orange cut in half
3 tbsp shredded ginger
1/3 cup finely shredded red onion, or shallots
2 garlic cloves finely minced
3 to 4 tbsp sesame seeds. ( sprinkle the sesame seeds only at the end )
For the dressing :
1/2 cup sesame oil
1/2 cup seasoned rice vinegar
2 tbsp vegetable oil
1 1/2 tbsp low sodium soy sauce
1 1/2 tbsp sugar
salt & pepper to taste
Steps
Combine all of the salad ingredients, in a large bowl. Tossing until well mixed.
In another bowl, whisk together the dressing and pour over the salad, tossing to coat.
CHEF’S TIPS: The easy and fast way, is to use a ready rotisserie chicken. Shred the meat while discarding the skin. Bon Appétit.
