Lemon Thyme Chicken

Ingredients

  • • 1 whole chicken (about 4 lbs/1.8 kg)
  • 2 lemons, sliced
  • 6-8 sprigs of fresh thyme
  • 4 garlic cloves, minced
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Steps

  • Preheat your oven to 425°F (220°C).
  • Rinse the chicken inside and out, then pat it dry with paper towels.
  • In a small bowl, mix the minced garlic, olive oil, salt, and black pepper to make the marinade.
  • Carefully loosen the skin of the chicken by sliding your fingers under the skin, being careful not to tear it. Insert the fresh thyme sprigs and lemon slices under the skin, distributing them evenly over the breast and thighs.
  • Rub the chicken with the garlic olive oil mixture, making sure it’s evenly coated.
  • Place the chicken in a roasting pan or baking dish. Arrange additional thyme sprigs and lemon slices around the chicken.
  • Roast the chicken in the preheated oven for about 1 hour and 15 minutes or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh.
  • Remove the chicken from the oven and let it rest for a few minutes before carving.
  • Serve the lemon thyme roasted chicken with your favorite sides, such as roasted vegetables or a fresh green salad. The combination of lemon and thyme adds a delightful burst of flavor to the tender and juicy chicken!
