Garlic Roasted Chicken

Ingredients:

  • 1 whole chicken (about 3.5 / 4 pounds)
  • 8 cloves of garlic, minced
  • 2 tablespoons olive oil
  • 1 lemon, halved
  • fresh rosemary 4 sprigs
  • fresh thyme 4 sprigs
  • Salt and Pepper
  • 1 cup chicken broth
  • 2 tablespoons butter, melted

Utensils

1 Chef’s knife

1 Potato Peeler

1 Covered Pot

1 Oven

Kitchen twine

Instructions:

  1. Preheat the Oven: Preheat your oven to 425°F
  2. Prepare the Chicken: Clean it with cold water and dry it with paper towels. Season the cavity of the chicken with salt and pepper. Place half of the minced garlic, and one halved lemon, and add rosemary and thyme inside the cavity.
  3. Season the Chicken: In a small bowl, mix the remaining garlic with olive oil, melted butter, salt, and pepper. Lift the skin of the chicken and rub the garlic mixture under the skin and over the surface of the chicken.
  4. Truss the Chicken: Tie the legs together with kitchen twine and place the wing tips under the body of the chicken.
  5. Roast the Chicken: Place the chicken in a roasting pan. Pour the chicken broth into the bottom of the pan. Roast in the preheated oven for about 1 hour and 25 minutes, or until the internal temperature of the chicken reaches 165°F The skin should be crispy and golden brown.
  6. Rest and Serve: Remove the chicken from the oven and let it rest for 20 minutes before carving. This allows the juices to redistribute throughout the meat. Serve with a side of roasted potatoes or glazed carrots (check the recipe down below.)

    This was a great recipe. Very enjoyable with any meat, a New York Steak will do fine.
