RECIPE

Minty Tabbouleh Salad:

Ingredients:

  • 1 cup bulgur wheat
  • 2 cups boiling water
  • 1 cup fresh mint leaves, finely chopped
  • 1 cup fresh parsley leaves, finely chopped
  • 1/2 cup diced cucumber
  • 1/2 cup diced tomatoes
  • 1/4 cup red onion, finely chopped
  • 1/4 cup extra virgin olive oil
  • 1/4 cup fresh lemon juice
  • Salt and pepper to taste

Instructions:

  • Place the bulgur wheat in a heatproof bowl and pour the boiling water over it. Cover the bowl and let it sit for about 30 minutes or until the bulgur is tender and has absorbed the water.
  • Fluff the bulgur with a fork and let it cool to room temperature.
  • In a large mixing bowl, combine the cooked bulgur, fresh mint, parsley, cucumber, tomatoes, and red onion.
  • In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper to create the dressing.
  • Pour the dressing over the salad and toss everything together to coat the ingredients evenly.
