The Roussillon wine region covers the part of the eastern edge of the Pyrenees Mountains. The Côtes du Roussillon delimited by Les Aspres a natural park, was created in 1977. Only the red wine can claim the title of Les Aspres. The varietals are Grenache, Syrah, Mourvèdre, some can claim a dash of Cinsaut, and a mutation of Grenach noir might be possible with Lledoner Pelut. In any event, try one bottle you might sway your palate to an interesting experience. I raise my glass “a Votre Sante!”
